Welsh Lamb Burger Recipe – Mediterranean Style

To commemorate National Burger Day (27th August 2015) and the Welsh Lamb ‘Back to School’ recipe campaign to provide nutritious meals for enhancing schoolchildren’s brain power, Motherhood Diaries presents to you the homemade Welsh Lamb Burger, made with real Welsh Lamb Mince, but prepared Mediterranean Style! Utterly delicious and packed full of iron for growing those kids’ muscles and brains!


Makes 6 burgers

(Side note: We grilled our burgers on a barbeque grill, but you can use an oven grill on medium heat or regular oven at 180C/350F/Gas Mark 4 for 20-30 minutes)


For the burgers:

  • 450g Welsh Lamb Mince
  • 1 egg
  • 1 onion, chopped finely
  • 1 garlic clove, grated
  • Salt
  • Extra Virgin Olive Oil for drizzling
  • 6 Wholemeal Buns or Baps
  • Sliced cheddar cheese (optional)

Dry rub seasoning:

  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp ground coriander
  • ¼ tsp cumin


  • Mix all the burger ingredients together in a large bowl – use your fingers to really smush and mix those ingredients together!
  • Divide the mixture into 6 (or 7 like I did, but they will end up small)
  • Make a ball and then flatten the ball with the palm of your hands on a flat surface to make the burger shapes.

  • Mix all the dry seasoning ingredients together and rub on each side of the burgers

  • Drizzle each burger with Extra Virgin Olive Oil (front and back)

  • Place in the oven/grill and cook until golden and cooked through.
  • Toast your buns/baps lightly before placing the burger on them.
  • Add a slice of red tomato, red onion and some spinach to the bun
  • Garnish with a side salad and Tomato Chutney sauce.
