Side Salad Recipe
A perfect garnish to most meals. This side salad is one of my favourite kind of salads, partly for its simplicity, but mainly for the delicious dressing that provides just enough zing and fresh flavour to complement any dish.

For the salad
- Mixed Leaves
- Cherry Tomatoes
- Feta Cheese
For the dressing
- 1 tsp mint
- 1 tbsp. olive oil
- Juice of half a lemon
- 1 tsp salt
- Tear the mixed leaves and place in a large bowl
- Chop the Cherry tomatoes in half and crumble the feta cheese into the bowl with the mixed leaves
- Pour the dressing over the salad and mix well.
